Easiest Vegetarian Enchilada Skillet

Get ready to indulge in a little spice that keeps you coming back for more and more bites until it’s a race for the last enchilada! These also make great leftovers if you have the self control to save some. Amazing flavor and texture that is enhanced by our favorite tortilla recipe. You won’t regret creating this dinner! 

My easiest vegetarian enchiladas skillet is my own take on my mom’s classic enchiladas. Her recipe is one that I still ask her to make me every year on my birthday. It’s seriously the best. There is something so comforting and warming about a classic enchilada, it makes you feel joy. 

These enchiladas are perfect for large family gatherings because you really get to make it your own. The base of the enchiladas are meat, cheese, and our homemade sourdough tortillas. Then, you choose all of your own toppings! Perfect way to please many different people! Some of my all time favorite recipes are the ones that are so simple and easy to make your own, this is one of them.

 

Over here at the Unrefined Baker we do eat vegetarian most of the time, so we opt for a vegetarian friendly meat. My absolute favorite is the Field Roast brand. The flavor is amazing. But you can totally make it your own and use your favorite sausage, beef or chicken. 

Easiest Vegetarian Enchilada Skillet

Cheesy, somewhat spicy, and packed with flavor these enchiladas will not disappoint! They are perfect for a family meal, you get to make it your own! Cover them in guacamole and salsa and dig in! Enjoy!

  • Serves 4 People

Ingredients

  • 15 oz of your favorite enchilada sauce
  • 8 flour tortillas
  • Vegetarian Sausage (I use Field Roast) you can choose your meat
  • Monterey Jack cheese, cut into 3/4" x 6" strips
  • 1 can of mild diced green chilies
  • ½ cup shredded Mexican style cheese

Instructions

  1. Cook your sausage. I prefer it to be ground up into smaller chunks. Cut your cheese into pieces that resemble a smaller version of the classic string cheese.
  2. Get out your tortillas, we use our homemade sourdough tortillas and they are SO good. Add the meat and cheese to the tortilla and roll them up and place them in a cast iron skillet.
  3. Once all the tortillas are rolled up and in the skillet, you are going to cover them with your choice of enchilada sauce and mild diced green chilies
  4. Cover with shredded mexican style cheese blend or more jack cheese.
  5. Bake in the oven at 350 degrees for 25 - 30 minutes, or until the cheese starts to brown on the top.
  6. Let cool slightly and serve with all the toppings you love! Cilantro, onion, jalapenos, sour cream, avocado, and lime. The options are endless!
