Lemon Salmon and Orzo

A light and creamy sauce that pairs so well with the seasoned salmon swimming on a bed of flavorful orzo. Made in a single cast iron pan, because let’s face it, who wants extra dishes? A quick and easy dinner to add into your rotation that will leave you feeling good, and perhaps even room for dessert!

Ingredients

  • Salmon
  • 1/2 lb Orzo
  • 2 Zucchini's, shredded
  • 1/4 cup Butter
  • 2 cups chicken or veggie broth
  • 1/2 cup wine of choice
  • 1/4 cup heavy cream
  • 1/2 cup parmesan cheese
  • 1 lemon, sliced
  • 1 lemon, zested
  • 2 tsp Thyme
  • 2 tsp garlic
  • 1/4 tsp salt
  • 1 tsp lemon pepper

Instructions

  1. In a pan on the stove place the butter, thyme, and garlic. Add the orzo and let it brown.
  2. Once the orzo has browned you will add the wine to the pan to deglaze it.
  3. Take your lemon, and zest the whole thing into the pan with the browned orzo.
  4. Add in the shredded zucchini with the salt and lemon pepper. Add in the broth.
  5. Place salmon on top of the orzo, top with butter, salt, lemon pepper, garlic and lemon slices.
  6. Bake in the oven for 15 minutes at 425 degrees.
  7. Remove the pan from the oven, take salmon out, add in cream and parmesan cheese and stir.
  8. Place salmon back in the pan with fresh thyme and serve! Enjoy!
