Think about how you feel eating that and double your amount of joy is what you get when you eat these chocolate chip marshmallow cookie bars. Spring is here and summer is just around the corner, and these make a great addition to your s’more needs, with much less of the mess. 

 

Growing up I always loved eating s’mores. There’s something comforting about s’mores and the smell of the bonfire after a fun long summer day. What I always hated was how sticky your fingers get when eating s’mores. It’s so inconvenient. While that never stopped me from eating them, I like to switch it up and make these cookie bars for the late spring and summer bonfire evenings too. 

These cookie bars are soft, crunchy, and gooey all wrapped up into one bite! They seem difficult to make (because you will make your own marshmallow) but I promise you they are SO easy! Making marshmallows might seem daunting but it’s super quick and easy. These will be your new favorite go to party dessert.

With just a few ingredients, you’ll have these chocolate chip cookie bars made in no time!

Chocolate Chip Marshmallow Cookie Bars

Soft, crunchy, gooey, marshmallow, chocolate, graham cracker, need I say more? These chocolate chip marshmallow cookie bars are perfect for your spring and summer evenings! The best chocolate chip cookie twisted together with s’mores is going to be your new favorite, super simple and quick, dessert!

Ingredients

  • ½ cup room temperature butter
  • ¾ cup packed brown sugar
  • 1 egg, room temperature
  • 1 tsp vanilla
  • 1 cup flour
  • 1 cup crushed graham crackers
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup chocolate chips
  • 3 chocolate bars
  • 2 egg whites
  • ½ cup granulated sugar
  • ½ tsp cream of tartar
  • ⅛ tsp salt
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 350 degrees and line a 8x8 square pan with parchment paper.
  2. In a stand mixer, combine softened butter, brown sugar, and vanilla. Mix on medium speed until everything is well combined and the butter starts to look fluffy. Add the egg and mix until just combined.
  3. In a separate bowl, mix graham cracker crumbs, flour, baking powder and salt. Add the dry ingredients to the wet and mix until just combined. Do not over mix.
  4. Divide the cookie dough into ⅔ and ⅓ parts. Take the larger amount of dough and press it into the bottom of the pan. Break up your chocolate bar and place them on the cookie dough. Set the ⅓ of cookie dough off to the side.
  5. Now you are going to make the marshmallow cream. In a pan on the stove place eggs whites, sugar, salt and cream of tartar. Turn the stove on and start to whisk the mixture. You do NOT want this mixture to get too hot. You will want to remove the pan from the heat after 1 minute and continue to whisk with the heat off for another minute. Repeat this process until the mixture has become foamy and thick. Probably 4 to 6 minutes.
  6. Right away you will place this mixture in a stand mixer and beat on high speed for about 6 minutes or until a stiff peak forms.
  7. Spread the marshmallow fluff over the cookie dough/ chocolate bars. After the marshmallow is covering the chocolate, add more chocolate chips on top of the marshmallow. Finish by dividing up the ⅓ cookie dough into small flat pieces and placing them on top of the marshmallow.
  8. Bake the bars for 25 - 30 minutes or until the top is lightly golden brown. Remove from the oven and let cool on the counter for at least 1 hour
  9. Cut the bars into squares and serve! Enjoy!
