Old-Fashioned Iced Oatmeal Cookies – YUM. These Old-Fashioned Iced Oatmeal Cookies are so much better than the store bought cookies you had as a child, yet they still are full of nostalgia. They are soft in the middle, chewy on the edges, perfect amount of sweetness, what more could you want!

Growing up I always wanted the store bought treats, now, as an adult, I still want those same treats but without all the added ickiness (preservatives etc.) so I opt to make my own “healthy” version. Don’t get me wrong, I wouldn’t necessarily call these cookies healthy, but they are free of all the chemicals you might eat if you bought them from the store. So, that is a win for me and I will go ahead and call them healthy!

While I love oatmeal cookies, my wonderful husband Caleb is a big fan of all things oatmeal, especially cookies. These Old-Fashioned Iced Oatmeal Cookies were made with him in mind. Crunchy and soft, sweet but not too sweet, and the perfect frosting make for the best Old-Fashioned Iced Oatmeal Cookie! 

 These Old-Fashioned Iced Oatmeal Cookies are super easy to make! Just combine oats, flour, baking powder, soda, salt, and cinnamon and mix with butter, sugar eggs and vanilla. Dip in the frosting and they are ready to go! These cookies are perfect for weekday nights, family parties, Sunday BBQ’s, or tea parties! While oatmeal cookies are wonderful all the time there is something about eating this cookie in the spring with the sun out and surrounded by flowers. Frosted Oatmeal Cookies

Old-Fashioned Iced Oatmeal Cookies – the perfect cookie. These cookies are soft in the middle and crispy around the edges. You can get the perfect “snap” with these cookies. Not too sweet, the oatmeal and the cinnamon blend perfectly. Top these cookies off with icing and you have the perfect cookie! Enjoy these cookies outside on a spring day with a cup of coffee! Enjoy!

Ingredients

  • 2 cups oatmeal
  • 2 cups flour
  • 1 tbs baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • 1 cup room temperature butter
  • 1 cup packed brown sugar
  • ½ granulated sugar
  • 2 eggs at room temperature
  • 1 tsp vanilla
  • Frosting: 2 tbs cream and 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350
  2. Blend the oats about 9 or 10 pulses in a food processor. You just want the oats to start to break down but not into oat flour.
  3. In a large bowl combine the oats, flour, baking powder, soda, salt, and cinnamon.
  4. In a stand mixer add your softened butter and sugars. Mix until well combined and starts to become fluffy. Add the eggs and vanilla and mix until just combined.
  5. Add your dry ingredients to the stand mixer until it is fully incorporated.
  6. Place parchment paper on a cookie sheet and place 2 tbs balls of dough 2 inches apart. Bake for 10 -12 minutes until the bottom begins to brown.
  7. Remove cookies and place on a rack to cool.
  8. Combine the powdered sugar and the cream. Whisk until well combined and somewhat thick. Dip the cookies in the icing and let the extra drip off. Set the iced cookies back on the rack to let the icing set.
  9. Eat cookies and enjoy! Store cookies in an airtight container or refrigerator.
