Peanut Broccoli

A quick and easy dinner that tastes amazing and is good for you, aaahh yes please! This flavorful peanut sauce with a warm heat is so delicious and goes perfectly with the broccoli and red peppers with a side of brown rice. Add some water chestnuts for a well deserved crunch that is so refreshing! You will definitely want to add this into your weekly rotation, we haven’t regretted it yet!

Growing up peanut chicken was a staple in my family’s house. My mom was making this weekly and even though we had it often it was still always requested for birthdays. While we don’t eat meat anymore I have taken my mom’s famous peanut chicken and transformed it into my favorite, quick, weekday vegan dinner.

It seems complicated – making peanut sauce that is. But trust me, it’s not complicated at all. It uses just a few ingredients and you can make it up in 5 minutes, the hardest part of this whole meal is just mixing the peanut butter! And the options are endless with peanut sauce, it’s easy to make extra sauce and use it as a quick salad dressing for a thai salad. It’s so perfect.

I am always looking for new recipes that I can make for dinner after a long day at work that are still healthy. Often when I get home after a full day the last thing I want to do is make a time consuming healthy meal. This happens to be a delicious, healthy, and quick meal that will feel like you just grabbed take out on the way home from work. 

 

Peanut broccoli happens to be one of those meals that takes just a few minutes to prepare and tastes so good, while being healthy and filling at the same time. You will start to make this weekly, I promise.

One of my favorite things about this meal is that you can absolutely make it your own! Do you love chicken? Add it. Tofu, add it. Mushrooms? Add it. You can make this your own by adding whatever veggies are your favorite and tossing some protein into it as well. I have even cooked up many different types of veggies separately, and meat, and served it to a large group of picky eaters and it is so great because everyone can choose what they want!

Ingredients

  • 3 cups chopped broccoli
  • 1 red pepper, sliced thin
  • 1 8oz can of water chestnuts
  • 1/2 cup peanut butter
  • 2 tbsp brown sugar
  • 1/2 cup soy sauce or coconut aminos
  • 2 tbsp water
  • 2 tbsp rice vinegar
  • 2 tsp garlic powder
  • 2 tsp lemon pepper
  • 1 tsp ginger
  • 1/2 tsp red pepper flakes
  • 1/4 tsp salt
  • 1 tsp sesame seeds

Instructions

  1. In a frying pan, add a splash of water, broccoli, red pepper, and water chestnuts. Steam until tender.
  2. Mix peanut butter, brown sugar, soy sauce, water, vinegar, garlic, lemon pepper, ginger, red pepper flakes, salt, and sesame seeds until well combined.
  3. Add peanut sauce to frying pan with steamed veggies. Let peanut sauce soften with the heat and then mix well.
  4. Serve with brown rice and peanuts on top. Enjoy!
