Sourdough Pizza Crust

Pizza might be my favorite food. I can’t say for sure because there are so many foods I love, but pizza is up there. One of the best things about pizza is that you can make it your own, so you always get what you like. Toppings are endless, creativity endless, deliciousness endless. There is always something new to try when it comes to a pizza, or you can always stick with the classics.

Everyone claims they have the best pizza, and while I have had a lot of good pizza in my life, I have also had some pretty bad pizza too. I like to think that because of all the pizza I’ve had, it has really helped me to develop the best pizza crust.

I have decided that the best way to figure out if the pizza you are actually eating is good, is to eat it cold. I think most pizza’s always taste good hot, but the really good pizza’s, you know, the ones with the perfect crust and just right amount of cheese, taste delicious the next day cold. For example, Costco pizza. It’s not bad when it’s hot, dare I say good, but the next day it’s done. The crust is all soggy by then and way too much cheese that is all hard.

Don’t worry – this pizza is nothing like Costco pizza. This pizza crust is a million times better, and you don’t feel horrible after you eat it. It’s really the best situation possible.

Sourdough Pizza Dough

Soft, chewy, fluffy on the inside and crunchy on the outside and bursting with buttery flavor, this is the best pizza dough ever. The sourdough adds an amazing depth of flavor that cannot be beaten! It’s a super easy overnight rise that will be ready in no time! Enjoy!

  • Prep Time 10 Minutes
  • Cook Time 15 minutes
  • Fermenting Time Over night
  • Serves 2 - 4 People

Ingredients

  • ½ cup (100 grams) sourdough starter
  • 2.5 tsp (15 grams) salt
  • 3 tbsp (45 grams) olive oil
  • 3 ¼ cups (450 grams) flour
  • 1 ½ cups (255 grams) warm water

Instructions

  1. 7pm: Mix all the ingredients together in a stand mixer until the dough starts to pull away from the side of the bowl. Cover your dough and let it sit overnight at room temperature.
  2. 8am: Perform 3 stretches and folds over the next 1.5 hours. Every 30 minutes (8am, 8:30am, and 9am). Pull one side of the dough up over the center of the dough, making sure not to break the dough. Rotate the bowl and continue until all sides are stretched. Let dough rest and repeat in 30 minutes.
  3. 9am: Cover the dough and place in the fridge all day, and up to 36 hours, we recommend at least 3 hours in the fridge to give the sourdough a deeper flavor.
  4. Remove the dough from the fridge when ready to use. Let dough sit on the counter for 30 minutes.
  5. Divide the dough into 4 pieces (depending on what size you want your pizza’s) and cover with a towel. Let rise for an additional 30 minutes.
  6. Your dough is now ready to use! Bake your pizza your favorite way. We recommend a pizza oven, or a cast iron skillet in the oven. Cover them in all your favorite toppings, enjoy!
