Growing up my mom usually made this meal in the fall (one of the better times of the year to use cabbage) but there was also another time of year that these cabbage rolls came out, March 17th, just in time for St. Patrick’s Day. The green from the cabbage is such a fun dinner to eat on St. Patrick’s Day. As well as just being delicious, healthy, and very filling too!
Cabbage rolls, or as we called them growing up Kalushki, are rice, meat and vegetable filled Cabbage Rolls. It’s a recipe that has been in the family for a while now, originating with my Polish German heritage.
Making something like Cabbage Rolls can seem intimidating but they are honestly so easy. Everything is cooked up in a big pot, mixed together, and then rolled into the steamed cabbage and baked. It’s perfect for using up day-old rice or extra meat.
While my family and I do not eat meat, you can easily use beef, leave it out, use beyond beef or vegetarian sausages, it really is so flexible for how you create this dish.
Making Growing up my mother always served this classic family dinner with a hearty salad with lots of veggies and ranch, corn on the cob, and often with homemade applesauce too!
