The Easiest Roasted Tomato Soup

Mmmm… that feel-good classic feeling that only comes from being warmed up from a bowl of tomato soup! Using these fresh ingredients brings out so many amazing flavors and creates the perfect texture that will leave your mouth in delight. Get ready to class up a classic soup that will have everyone going back for seconds and may even take you back to your childhood.

Ingredients

  • 8 medium tomatoes halved
  • 1 red onion halved
  • 1 head of garlic
  • 3 tablespoons fresh thyme
  • 1 cup oat milk (or milk of choice)
  • salt and lemon pepper to taste
  • oil for drizzling

Instructions

  1. Preheat oven to 425 degrees.
  2. In a large oven safe pot place the tomatoes, onion, garlic, thyme and drizzle with oil. Pace in the oven for 30 min. You will know it is done when the onion and tomatoes start to char on the top.
  3. Remove from the oven and transfer to a blender or use an immersion blender. Return the pot to the stove and add the milk, salt and lemon pepper. Heat up on the stove top too desired temperature.
  4. Optional: Top with parmesan cheese, hearty sourdough bread, and a sweet balsamic salad on the side!
