Sourdough Banana Bread

This banana bread is absolutely packed with flavor and really fills you up. It also is an easy way to use up any extra sourdough discard. I love eating banana bread for breakfast but if there is too much sugar I get a headache, this banana bread is perfect for breakfasts with just the right amount of sugar. Not only perfect for breakfast but also snacks, or really any time of day. Serve it up warm with a cup of coffee and butter, enjoy!

Ingredients

  • 4 ripe bananas
  • 1/2 cup sourdough discard
  • 1/2 cup vegetable oil
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp cinnamon
  • 2 tsp vanilla
  • 1 3/4 cups flour all purpose or whole wheat
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. In a mixing bowl, combine mashed bananas, sourdough starter, sugar, oil, eggs, and vanilla. Mix until combined.
  2. In a seperate bowl combine cinnamon, flour, baking powder and salt.
  3. Add dry ingredients to wet ingredients, mix well.
  4. Put parchment paper into a loaf pan and pour batter into the parchment covered pan.
  5. Bake in the oven at 325 degrees on the middle rack for 60min or until a toothpick comes out clean from the center.
  6. Enjoy! Top with butter, peanut butter, or cream cheese!
