Peanut butter pie bars

These peanut butter pie bars are my version of combining two of our most loved and cherished childhood treats. They are the best combination of both treats, a fancier version of my beloved peanut butter balls, and a simpler (somewhat) less rich version of his peanut butter pie.

Peanut butter pie bars are crunchy, smooth, sweet, chocolaty, everything the perfect dessert should have. Keep them cold in the fridge for those perfect sunny afternoons when you need a sweet treat or serve them up for backyard BBQ. Perfect treats for baby showers, wedding showers, tea parties, you name it! They are the perfect treat to serve that seems like they are tricky to make so everyone will be impressed, but really they are so easy!

  • Prep Time 5 Minutes
  • Cook Time 10 Minutes
  • Cool Time 1 hour Minutes
  • Total Time 70 minutes

Ingredients

  • 1 ½ sticks butter
  • 2 cups crushed graham crackers
  • 1 cup of powdered sugar
  • 1 ½ cup peanut butter
  • 2 cups chocolate chips + 4 tbsp peanut butter
  • ½ tsp sea salt

Instructions

  1. In a pan on the stove, heat up butter until it is bubbly and starts to brown. It will smell like hazelnuts and joy.
  2. Once the butter is browned remove from heat and add the 1 ½ cups of peanut butter, powdered sugar, followed by the crushed graham crackers.
  3. Place the mixture in a parchment lined 9x13 inch pan. Place in the fridge for 10 minutes.
  4. Heat up the chocolate and 4 tbsp of peanut butter in a pan of the stove until it is melted. Pour over the graham cracker mixture and spread it out until everything is covered. Top with flaky sea salt if desired (I highly recommend).
  5. Let cool in the fridge (or freezer if you can't wait as long like me). Once cooled, at least an hour, remove and cut into squares. Enjoy!
