Sourdough Apple Fritter Bread

Fall time (or lets be honest, anytime) is the time for donuts, specifically apple fritters. There’s something about the cinnamon and apple combo that makes it amazing. Oh and maybe the fact that it’s also deep fried. 

 

While I love apple fritters I don’t always love how they make me feel after I eat them. And I have never been successful with deep frying at home. I have made apple fritters that are baked, but they just leave me wanting the real thing. I often have a hard time making the “healthy” version of things so instead I have to get creative and make something I like better. This one was a hard challenge – but I think I did it. And, a perfect way to use up some of your sourdough discard!

I made a rule that I can’t have an apple fritter every weekend. But Fall rolls around and I want all the cozy fall things. And so, my Sourdough Apple Fritter Bread was born! It’s packed with Fall flavors like cinnamon, apples, brown sugar, with a sourdough flavor. Talk about the perfect Fall bread. This one will be on repeat in your home all season!

 

One thing that I love about this bread is that it can function as many different things. Serve it up for brunch and have your friends and family over! Kids need an after school Fall snack? This is perfect! Or maybe you add a little extra frosting and turn it into a Halloween dessert, Thanksgiving dessert, or even a birthday cake. The options are endless. 

Last Saturday my family headed out to our local apple farm and picked a ridiculous amount of amazing fresh apples. A few of those apples were used to make this bread, I won’t tell you how many loaves I made – it probably was too much. But one of the great things about this bread is you can use any apples! 

Sourdough Apple Fritter Bread

Ingredients
  

Dry Ingredients

  • 2 cups Bread Flour
  • 2 tsp Cinnamon
  • 1 1/4 tsp Salt
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda

Wet Ingredients

  • 1 1/2 cup Brown Sugar
  • 1/2 cup Sourdough
  • 1/2 cup Apple Cider
  • 1/2 cup Yogurt
  • 1 Egg
  • 8 tbsp Browned Butter
  • 1 tsp Vanilla

Fold In

  • 2 Large Diced Apples (Peels Left On) Keep 1/2 off to the side for topping

Crumble topping

  • 3/4 cup Brown Sugar
  • 1/2 cup White Sugar
  • 1 cup Flour
  • 1 cup Grated Butter
  • 1/2 cup Diced Apples

Apple Cider Glaze

  • 2 cups Powdered Sugar
  • 1 - 2 tbsp Apple Cider
  • 1 - 2 tbsp Cream

Instructions
 

  • In a small bowl mix together the dry ingredients, flour, (I like to use bread flour but all purpose will work to) cinnamon, salt, baking powder, and baking soda.
  • In a pan on the stove start to brown the butter. Once it starts to smell amazing and look foamy and brown then you know it’s done. Put it aside and let cool while you mix the wet ingredients.
  • Mix together the wet ingredients and sugar in a large bowl. Mix the sourdough, brown sugar, apple cider, yogurt, egg and vanilla.
  • Mix the dry ingredients into the wet. Combine well and add in the browned butter.
  • Dice up your apples, leaving ½ cup of apple to the side. Fold in the diced apples.
  • Make the crumble topping. Mix together the brown sugar, white sugar, flour and cinnamon. Mix well. Add in the grated butter and mix well. Then add in the remaining 1/2 cup of Apples. Set crumble aside for now.
  • Prepare two 9x5 loaf pans lined with parchment paper. Divide your batter evenly into each of these pans.
  • Divide your crumble topping in half and cover each loaf with it.
  • Bake at 350 degrees for 50 minutes or until a toothpick comes out clean.
  • If you want, this is the time to make the apple frosting glaze. Mix together the apple cider, cream, and powdered sugar. You might need to add more cream or apple cider depending on the thickness you desire for the glaze. Drizzle on the bread before the bread has completely cooled.
  • Allow to cool for at least 20 minutes before cutting into it - this is a hard part but very necessary. After 20 minutes slice, serve, and enjoy!
