Sourdough Cinnamon Butter Rolls

Do you ever wake up on a sunday morning and just crave a cinnamon roll? Well I think this happens to me every Sunday – maybe multiple times a week. Specifically on Sunday mornings though is when I really want that sweet treat and a cup of coffee. Sundays seem to scream slow and cozy. 

 

Growing up in my family it was always the sweet treat with a strong cup of coffee, I think it’s the Norwegian heritage that starts to show in me. I need to have that strong cup of coffee to balance out the sweetness and butter in the cinnamon roll. 

 

I have always loved cinnamon rolls but what I don’t like is when the glaze is so faint it might as well just be a roll. I want flavor to come through in the cinnamon rolls and the glaze is such a perfect opportunity to boost the flavor. So, I took the classic cinnamon roll and made it better, specifically more butter. We love butter over here at Unrefined Baker. 

 

A MAJOR game changer when it comes to cinnamon rolls is folding over the dough when you roll it. Doing this creates a pocket to hold all that buttery goodness. Not only do you fold over the dough but the butter is not melted, it’s softened and mixed with brown sugar and cinnamon to create a frosting-like filling that you trap in the folds of the cinnamon roll. Trust me, this is the way to do it. 

 

Sourdough, butter, cinnamon all trapped inside the folded cinnamon dough and baked to a perfect flaky, slightly crispy on the outside and soft on the inside. This is what dreams are made of, specifically Saturday night dreams of Sunday morning.

Sourdough Cinnamon Butter Rolls

The best Sunday Morning Cinnamon Butter Rolls. It sounds just like what you think it is, Cinnamon Rolls, with sourdough and lots of butter. These are seriously the best cinnamon rolls you will ever eat. They are light and fluffy while also absolutely packed with flavor. Cinnamon rolls homemade is the best way to start your weekend morning. They really are super easy, make them the night before and bake them in the morning. Your friends and family will love these. Get a cozy blanket, cup of coffee, and let your home smell dreamy as these cinnamon rolls bake. Happy Baking!

  • Prep Time 30 Minutes
  • Cook Time 35 - 45 Minutes
  • Total Time Over Night rise + 1 hour

Ingredients

  • 1 cup sourdough discard
  • 1 ½ cups buttermilk
  • 1/2 cup frozen grated salted butter
  • 1 cup + 2 tablespoons brown sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ cup butter - soft
  • 2 cups powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla
  • 1 tbsp cinnamon
  • 1 cup softened butter, divided

Instructions

  1. 7pm - Mix together buttermilk, brown sugar, sourdough discard, frozen grated butter and flour until combined. Let it sit on the counter overnight.
  2. 8am - Sprinkle the salt, baking powder, and baking soda over the dough and mix until combined. Roll out the dough on a highly floured surface until the dough is about 1 inch thick and the dough is in a rectangle shape.
  3. Preheat the oven to 375 degrees
  4. Mix up the filling in a mixer (or by hand will work if you don’t have one). You will combine the brown sugar, butter, and cinnamon and whip until combined well and it looks light and fluffy.
  5. Spread the whipped butter and sugar over the dough.
  6. Using a pizza roller or knife cut the dough into strips. Fold the dough over itself slightly to hold in the mixture and then roll up the dough into a cinnamon roll shape. Place in a parchment lined cast iron skillet. Repeat until all the cinnamon rolls are in the cast iron skillet.
  7. Bake the rolls for 35 - 45 min or until starting to brown on top.
  8. While the rolls are baking make the glaze. Mix butter, powdered sugar, vanilla, and heavy cream together in the mixer, mix until combined.
  9. Remove rolls from the oven and glaze while hot.
  10. Enjoy!!
